Balsamic pork with cauliflower and celeriac mash

Serves 4

Ingredients

  • 4 pieces pork (approx. 600g)
  • 1 teaspoon minced garlic
  • 1 brown onion Chopped
  • 1 small celeriac
  • 1/2 cauliflower
  • 2 Tablespoons balsamic vinegar
  • 1 bunch broccoli
  • 1 tablespoon chopped fresh rosemary
  • 1/4 cup milk
  • 1/2 cup parmesan cheese

Method

  1. heat pan and spray with oil
  2. add pork and cook approx. 2 minutes each side
  3. while still cooking add onion, garlic, rosemary and balsamic
  4. cook another 4 minutes or until done to your liking

whilst the pork is cooking, make mash:

  1. chop cauliflower and celeriac and cook in microwave approx. 6 min or until tender
  2. add milk and cheese and mash
  3. cook broccoli in microwave approx. 5 mins
  4. Divide into 4 serves and enjoy
