Chicken margherita

This tasty chicken margherita recipe is the perfect hearty meal, it’s tasty and satisfying and won’t leave your gut feeling bloated.

Ingredients

  • 4 chicken breasts (approx 200g each)
  • 1/2 can red kidney beans (200g)
  • 2 tablespoons lime juice (or 1 whole lime)
  • 1/4 teaspoon cumin
  • 1 Cup salsa
  • 1 cup shredded cheese

Method

  1. In a saucepan put beans, cumin and lime juice and stir. Cook for approx 5 min until warm
  2. At same time heat frypan and spray with olive oil
  3. Cook chicken approx 5 min each side
  4. Heat oven 180 degrees
  5. When oven hot put chicken on a tray, top with salsa and cheese
  6. Cook in oven approx 5 min or until cheese golden
  7. Divide the beans over 4 plates, top with chicken and serve
